I had some extra limes this week that needed to get used up, so today I whipped up this simple, creamy, matcha lime cheesecake bar recipe. I also currently have a lot of coconut yogurt in the fridge, so I knew I needed to try to work that in somehow too. I had no idea how it would actually come out, but to my surprise the result was a creamy dessert bar with the texture of cheesecake.
I went a little subtle on the matcha flavor so the lime is really the standout here, but if you want more of a matcha flavor to the bars try using 2 teaspoons of matcha powder instead of 1. If you don't have matcha powder, you can omit it entirely and just use the lime juice for flavor.
